Scarola (escarole) is a leafy green with a crisp heart and a pleasantly bitter flavour, much loved in Southern Italy.
How to enjoy: raw in salads, sautéed with garlic, olives and capers, or in the Neapolitan pizza di scarola and escarole and bean soup.
