Tagliatelle with mascarpone, speck and pistachio is an easy, fast and creamy first course that everyone would love. I've been very busy at work lately and when I get home I never know what to prepare for dinner. My daughter Naomi loves first courses as you all know, and above all, she loves pasta so I decided to make the whole family happy with this dish of tagliatelle mascarpone, speck and pistachios. Preparation

Boil a pot of lightly salted water and, when it boils, cook the pasta.

Heat a non-stick pan and, when it is hot, put the bacon sticks to toast.

Remove the speck from the pan and set it aside.

Put the mascarpone cheese in the pan together with the milk and dilute them.

When the pasta is cooked, drain it and put it directly in the pan with the mascarpone and milk and add a tablespoon of the pasta cooking water and the grated cheese.

Stir the pasta well for a few minutes then serve it hot with chopped pistachios.

You can replace the chopped pistachios with chopped almonds or hazelnuts.

You can replace the speck with pancetta or raw ham.
