
Spinach frittata (omelette) is very easy to prepare and you can eat both warm and cold, even put inside the sandwich or as a snack the spinach omelette is really delicious. I remember once, on the trip to go skiing with my family, we always stopped to eat in a small local takeaway on the road where they made the best sandwiches. It was a very famous place for sandwiches and people came from outside to eat them (now, unfortunately, it's closed) and they made the sandwich with the omelette which was just the spinach omelette. It's unbelievable as something so simple can be so delicious. The perfect combination of flavours. Well, let's see the ingredients together.
Ingredients
- 600g Fresh Spinach spinaci (800g if Frozen)
- 6 eggs
- 80g Parmigiano Reggiano DOP
- 1 garlic glove
- Extra virgin olive oil
- Black Pepper

Preparation
Wash and dry the spinach then remove the hardest pieces of stem and put them to cook in a non-stick pan with three tablespoons of extra virgin olive oil and a clove of garlic for about 15 minutes.
Salt them lightly and turn off the heat.
When you have the spinach cooked, put them in a bowl together with the eggs lightly beaten with a fork, grated Parmesan, a pinch of salt, black pepper and mix well all together until it's homogeneous.
Place the mixture in a baking tray with parchment paper and some olive oil and cooking it in a preheated oven at 180 ° for about 20 minutes until it is completely firm.
Let it rest for about 5/10 minutes before cut and serve.
