
Spinach Alla Genovese is a very easy recipe for a delicious and quick to prepare as a side dish. Ingredients
- 600g fresh (or frozen) spinach
- 50g butter
- 50g pine nuts
- 50g raisins
- Salt
Preparation
Soak the raisins in warm water.
Take a large pan and melt the butter. After washing and drying the spinach leaves, remove a piece of the stem and put them directly in the pan.
Cook for a few minutes over high heat then add salt and reduce the heat.
Cover with the lid and let the spinach cook for about 15 minutes.
Remove the lid, stir with a spoon and add the dried fruit.
Stir again and cook for another 5 minutes.
Your Spinach Alla Genovese are ready.
VARIANTS AND ADVICE
If you cook frozen spinach directly in the pan, it will cook longer than fresh spinach or blanched spinach.
If you are going to use fresh spinach you will not have to blanch it first.
If you want you can also add walnuts or hazelnuts or almonds as well as pine nuts and raisins
