Rice Salad with tuna and courgette

 

 

Rice salad with tuna and zucchini is a fresh, tasty, and quick dish to prepare. My wife and daughter love the rice salad and I always make a little more to have something ready and tasty even the next day. There's tuna, there's courgette and it's lemon flavored and I find it really perfect, light, fresh, and yummy, perfect for hot months like this. 😉 Do you want to try this recipe? Preparation

Wash the courgettes, remove the two ends, and cut them into small cubes.

Rinse the rice well under running water to remove the starch.

Boil a pot of salted water, when the water boils, throw in the rice and diced zucchini.

When the rice is cooked but still al dente, drain it together with the zucchini and pass it under cold water to cool it completely.


Put the rice and zucchini in a salad bowl with the drained and crumbled tuna in oil and lemon juice.

Dress with plenty of flavored extra virgin olive oil and chopped parsley.

Put the rice salad in the fridge for 20 minutes before serving.

VARIANTS AND ADVICE

Always pass the rice under cold water after cooking it otherwise it will not keep cooking.

You can replace the tuna with smoked salmon or diced ham.

You can add cubes of mozzarella well dried with kitchen paper.

You can also add sweet corn or other ingredients but no more than one of your choice.
