Wash the potatoes very well with the skin still on and cut them into large enough pieces.
Rinse the potatoes under cold running water then place them in a bowl covered with cold water and leave them to soak for about 20 minutes, changing the water after 10 minutes.
This procedure will help me to remove a little bit of the starch from the potatoes and leave them more crunchy.
Boil a pot of lightly salted water and, when it boils, put in the chopped potatoes. Cook them for about 15 minutes then drain and put them in a bowl.
Put all the cooked potatoes in a well oiled ovenproof tray and distribute them evenly.
Sprinkle the entire surface of the potatoes with plenty of grated Parmesan cheese.
Put plenty of extra virgin olive oil on the surface of the potatoes with the Parmesan and cook in a preheated oven at 200 ° for about 20 minutes until the Parmesan on the surface has taken on a nice golden colour.
Remove them from the oven and sprinkle with freshly chopped parsley.

VARIANTS AND ADVICE
You can also replace it with grated pecorino instead of parmesan.
You can add little breadcrumbs on the surface or on the base of the pan so that the potatoes do not stick.
You can remove the peel of the potatoes but if you leave they will be much tastier.
Do not put the parsley in cooking because otherwise, the potatoes will take on a bitter taste.
