Potato croutons with courgette and stracchino

 

 

Today I want to share with you a very easy, light and tasty recipe. Potato croutons with courgettes and stracchino perfect as an appetizer or a vegetarian main course. I can assure you that everyone will like them, I have prepared them with bright courgette and stracchino cheese and my family ate them all but you can indulge yourself as you like with meats and other cheeses and they will always be very appreciated. Let's start to see the ingredients and the steps to prepare this recipe.

I have put the doses to prepare many croutons so 4 people but intended as a second course. If you want to prepare the same dose as an appetizer, count that they will also be good for 8 people.

Put the potatoes with their well-washed skin in a pot full of cold water. Turn on the heat and boil the potatoes until they are cooked and soft.

While the potatoes are cooking, prepare the courgettes.

Wash, dry the courgettes and remove the ends then cut them into fairly small cubes. Put two tablespoons of extra virgin olive oil in a pan and heat them then cook the courgettes over high heat for a few minutes. Lightly salt the courgettes then lower the heat and continue cooking for another 5 or 10 minutes until the courgettes are cooked.

Remove the zucchini from the heat.

Once the potatoes are cooked, peel them and cut them into fairly thick slices.

Take a pan and grease it lightly, then when it is hot, cook the potato slices for a few minutes on each side so that a crust forms.

When the potato croutons are cooked, remove them from the pan and place them on a serving dish.

Put the diced zucchini and stracchino on top of the potato croutons and serve the hot potato croutons, warm but also cold they are delicious.

VARIANTS AND ADVICE

Remember to cook the potatoes in water all of the same sizes otherwise, they will have different cooking times.

You can replace the courgette with aubergines cooked in a pan, obviously, the cooking will be longer.

You can replace the stracchino with gorgonzola.

If you want a baked version, you can put the potato croutons in a pan with parchment paper lightly sprinkled with extra virgin olive oil and cook them at 200 ° in a preheated ventilated oven for about 15 minutes, turning them halfway through cooking.
