
Polenta pizza is a single dish or a second course to prepare for the whole family and customized in the way you prefer and with the ingredients, you like best. You can dress the polenta pizza with classic tomato sauce and mozzarella or choose, as I did, a more autumnal-winter dressing such as stracchino and mushrooms. The polenta pizza is really easy to prepare, I used instant polenta flour so it is really fast and super good. Once you try the polenta pizza, you will never leave it and with all the variations of toppings you can choose, you can have a different polenta pizza every day. Ingredients
For the base:
- 250 g instant polenta
- 1l water
- 1 pinch salt
For the dressing:
- 400g brown mushrooms
- 200g stracchino
- extra virgin olive oil
- salt
- parsley
Preparation
Clean and wash the mushrooms from the earth and cut them into pieces. Heat a non-stick pan with 3 tablespoons of extra virgin olive oil and cook mushrooms over high heat for 5 minutes then lower the heat and let them cook for another 15 minutes, mixing them so that they do not stick.
Add a pinch of salt and some parsley and turn off the heat under the mushrooms.
Put a litre of water in a saucepan on the pot and bring to a boil. Remove the pot from the heat and add the salt.
Sprinkle in the instant polenta flour, stirring quickly with a hand whisk so that no lumps are formed. Put the pot back on the heat and cook for 8 minutes over low heat until the polenta begins to thicken.
Take a round pan 26 centimetres in diameter and place a sheet of parchment paper on top.
Pour the polenta into the pan and level the surface so that it is about 1 and a half centimetres.
Put the stracchino into pieces and the mushrooms and distribute them over the entire surface of the polenta base, holding about a finger from the edge.
Bake the polenta pizza in a preheated oven at 200 ° for about 15/20 minutes until the stracchino has melted.
Remove the polenta pizza from the oven, sprinkle the surface with chopped parsley and serve the polenta pizza hot.

VARIANTS AND ADVICE
You can season the polenta pizza as you like with smoked Scamorza or as a classic pizza with tomato and mozzarella.
Put the chopped parsley at the end of cooking.
You can also use frozen mushrooms.
