Preparation

Boil a pot of lightly salted water and, when it boils, cook the pasta.

Put the ricotta in a bowl and add a tablespoon of the pasta cooking water and mixing well.

When the pasta is cooked, drain it and add it to the ricotta in the bowl, mixing well making sure that all the pasta is seasoned perfectly.

Add the drained anchovies in oil and, if you like, cut them into small pieces.

Put the pasta with ricotta and anchovies on the plates and decorate with fresh basil.


Serve the pasta hot.

VARIANTS AND ADVICE

If you want, you can also blend some anchovies in oil together with the ricotta cream in order to obtain a stronger flavour.

I advise you not to overdo it with salt because anchovies in oil are already quite tasty.

If you want to give a more decisive flavour to pasta with ricotta and anchovies you can finish the dish with grated salted ricotta.
