
Crepes with gorgonzola and walnuts are savoury crepes that are very easy to prepare, tasty and perfect for autumn or winter. You can also add a few pieces of pears and I assure you that they will be even better. This was my favourite crepes, I can't tell you how many I ate in my life and the beauty is, I never got tired of eating them. Have you ever thought of making this crepes with gorgonzola and walnuts? Ingredients
For the crepes:
- 400ml milk
- 200g flour 00
- 2 eggs
- a pinch Salt
- Butter (for the pan)
For the stuffing:
Preparation
Beat the eggs with a fork, add the milk and then start adding the flour, mixing with a hand whisk so as not to create lumps.
Dirt a non-stick pan with a little butter and cook a ladle of dough for the crepes. Move the pan well so that it is evenly distributed and when it starts to thicken, turn the crepes on the other side. Cook the crepes on the other side for a few seconds and remove it from the pan.
Make all the crepes using all the dough you have until it is completely finished.
When you have done all the crepes, dedicate yourself to the filling.
Put the ricotta and gorgonzola in a bowl and mix well with a spoon to make it creamy. Chop the walnut kernels and add them to the cream cheese.
Heat a pan (the one you used to make crepes is fine too) and lightly heat a crepe. Put two spoonfuls of ricotta and gorgonzola cream in the centre of the crepes and roll it up.
Keep the gorgonzola and walnut crepes in the pan for a short time, the cheese should be creamy but not completely melt.
Serve the gorgonzola and walnut crepes hot.

VARIANTS AND ADVICE
Instead of ricotta, you can also use mascarpone or Besciamella.
You can replace walnuts with hazelnuts.
You can also brown the gorgonzola and walnut crepes with a little bit of Besciamella and then in the oven.
