
Aubergine rolls with ham and cheese is a delicious and very tasty second course that can be prepared in a short time and will make happy even those who do not particularly love vegetables. My daughter, as you will have understood by now, is not a great lover of vegetables in general but above all, she does not like aubergines and courgettes which for me is very dramatic since I love them both. Knowing their love for meat rolls, I decided to try to prepare a similar recipe with aubergines and incredibly, I managed to make them eat them with gusto. Ingredients
- 2 aubergines (I prefer Streaked Purple)
- 100g cooked ham
- 100g provolone or similar
- 70g Parmigiano Reggiano DOP
Preparation
Wash and dry the aubergines.
Slice the aubergines lengthwise and grill them on both sides on a hot plate or in a non-stick pan.
Let them cool slightly then place a slice of ham on top of each slice of grilled aubergine and then a slice of thinly cut provolone cheese.
Roll the aubergine slice on itself and close with two toothpicks.
Put the rolls on a tray with parchment paper, sprinkle with grated Parmesan cheese and bake the eggplant rolls in a preheated oven at 200 ° with grill for 5/10 minutes at the most so that the cheese begins to melt.
Remove the eggplant rolls from the oven and serve hot.

You can add flakes of butter to the surface before baking.
You can also make the same recipe with grilled zucchini.
