Wash and dry the aubergines and remove slightly both the top and bottom part.

Cut the aubergines into slices of about 1 centimetre and grill them in a very hot grill or in a non-stick pan for about 15 minutes by turning them on both sides.

Grease an ovenproof tray and sprinkle with breadcrumbs.

Dry the mozzarella well and cut it into thin slices.

Make many layers of grilled sliced aubergines and mozzarella until all the ingredients are used up and fill the pan.

In each layer salt lightly.

Finish with grated Parmesan and breadcrumbs and put the butter into flakes.

Cook aubergines and mozzarella in a preheated oven at 200 ° for 25 minutes then for the last 10 minutes also put the grill until a golden crust has formed on the surface.


Remove from the oven aubergines and mozzarella au gratin and wait a few minutes before serving.

If you want, you can replace the aubergines with courgettes and you won't even have to grill them first.

You can also put grated Parmesan in each layer.

You can replace the mozzarella with other cheeses, I do not recommend buffalo mozzarella because it leaves too much water in cooking.
