Aubergine "Alla Pizzaiola"

 

 

"Melanzane Alla Pizzaiola" is a very good second course made with aubergine and tomato sauce, easy to prepare and perfect for those like me who sometimes don't want to turn on the oven. I am like this, there are days when my oven is on 12 hours a day and I bake cakes, biscuits, lasagna, and some other days I don't want to turn on the oven even under torture and today I thought about preparing this delicious and very easy recipe using a pan. Do you like aubergine? Do you know that my daughter who doesn't like them always eats them? I'm going to write the ingredients and the recipe and then run to the Fruttivendolo before I won't find any aubergine.

Preparation


Take the aubergines, wash them and remove the stalk.

Cut the aubergines into slices about one centimeter.

Heat a non-stick pan and grill the aubergine slices until cooked and soft.

Remove the aubergines from the plate.

Heat 4 tablespoons of extra virgin olive oil in a pan together with a clove of garlic cut in half, then add the tomato sauce and mix.


Cook over very high heat for about 2 minutes then add salt, lower the heat and let it cook over medium-low heat for about 10 minutes until the tomato sauce is ready.

In the pan alternate layers of grilled aubergines in tomato sauce, grated parmesan, and crumbled mozzarella in order to use up all the ingredients, then finish with grated parmesan, crumbled mozzarella, and dried oregano.

Close the pan with the lid and cook the aubergine again for about 10 minutes over low heat until the cheese on the surface has melted. Finish with some fresh basil leaves and serve it hot with some crunchy bread.

VARIANTS AND ADVICE

If you want, you can also make the same recipe with grilled zucchini.

You can also use tomato concentrate.

Cook the tomato sauce over high heat for a couple of minutes, in this way you will eliminate the acid without using the sugar.

Season with salt only at the end of cooking.

You can put dried oregano or fresh basil in the tomato sauce.
